Nordic baking, recipes, EYBD Previews and more

Please don’t hate me because I love baking. Baking, especially at this time of year, is therapy for my soul. To add to my ever-growing list of obsessions, I have now added all things Nordic. Nordic Christmas decorations are coming into the house as fast as I can order them. Recently, I even ordered an Advent Star for my window (similar to the one linked but a metal version on Ebay). Warning! Danger! Do not click on that link if you are into the Nordic esthetic in the slightest.

For a while now, I have been following Cecilia and Christoffer on YouTube. The couple live in a cabin outside of Longyearbyen (on the water) with their Finnish lapphund Grim. Visiting Longyearbyen is now on my bucket list. I love the dark and they have Polar Night there for a little over three months. I love the cold and as it is the northernmost town in the world, it is chilly. This area of the world benefits from the Northern Lights from late September to March. I want to see the Northern Lights before I head to that great big cookbook store in the sky! As long as I can get my Diet Pepsi and take all my cookbooks and cookware, I’d hitch myself to the world’s biggest toboggan in a heartbeat and head North.

What does all this have to do with Nordic baking? Christoffer was a chef for two decades and has been baking on their channel for a while now. He has written three Nordic cookbooks and I have ordered the two Nordic Baking editions (2023 and 2024). I absolutely love them. They come in a downloadable pdf format. A few of the recipes from the 2024 edition includes: Finnish tosca cake, Swedish mazarin cake, and Rustic lingonberry bread. From the 2023 edition, Coconut log, Swedish Christmas toffee, and Saffron biscotti. Cecilia and Christoffer shared a few images from the 2024 edition above: Caramel chews with nuts and Festive bread with pumpkin.

Cecilia published a gorgeous book in October by DK entitled Life on Svalbard: Finding Home on a Remote Island Near the North Pole which is a book of photography and narrative (not a cookbook). She is an incredible photographer and I will be sharing more about this title soon for those interested.

A reminder I posted a while back about Laufabrauð which is Icelandic leaf bread. I was lucky enough to have a friend who was able to track down a leaf cutting iron for me.

    I also love Scandinavian and Nordic baking books! I also recommend Norweigan Baking by Nevada Berg and I love the Scandi Kitchen cookbooks. Bronte Aurell’s recipe for cardamom buns may be my favorite of all the ones I’ve made and I also love her savory/ non-baking recipes.
