This week: Pound cakes, recipes, giveaways and previews

This week I had planned to feature recipes for a healthy start to the new year. After having a personally difficult week compounded by the happenings in the US in regards to the attack on the Capitol and with COVID still running rampant worldwide, I went for comfort again.

While I love baking and am known for my desserts, I am not one to crave sweet things and seldom have more than a bite unless it is something outstanding. That being said, I am mad for pound cake. My all time favorite pound cake is the Cream cheese pound cake. Smitten Kitchen’s version is the same as I have been making for decades and it is perfection.

We have over 3,300 recipes (online recipes) in our EYB Library for all manners of pound cake. This versatile dessert can: take on any flavor, be adorned with a tasty glaze, grilled in the summer with a fruit accompaniment, cubed and toasted and dipped into a chocolate fondue (or used as a sweet crouton), or made into a glorious bread pudding or trifle. The pound cake is the not-so-little black dress of cakes.

My favorite cookbook devoted to this dessert is Ultimate Pound Cakes: Classic Recipe Collection by Phyllis Hoffman DePiano (mother of the amazing Brian Hart Hoffman of Bake from Scratch). There are many cookbooks that share recipes for pound cakes in their dessert chapters but few that are just solely devoted to this tasty treat. A few other titles feature pound cakes in depth: The Pound Cake Book by Bibb Jordan as well as Cake Keeper Cakes: 100 Simple Recipes for Extraordinary Bundt Cakes, Pound Cakes, Snacking Cakes and Other Good-to-the-Last-Crumb Treats by Lauren Chattman and Elizabeth Alston’s Best Baking: 80 Recipes for Angel Food Cakes, Chiffon Cakes, Coffee Cakes, Pound Cakes, Tea Breads, and Their Accompaniments.
