This week: Best macaroni & cheese, cheesecake recipes, cookbook news and more
April 10, 2020 by JennyTwo of my most requested recipes while living in New York were macaroni and cheese and cheesecake. Do you see a theme? I have made both of these dishes hundreds of times in many variations over the years. Every Easter I would be assigned these dishes and would often bring something new I came across just to shake up things a bit. One year a recipe for Pineapple casserole caught my eye and decided that it would go great with ham. I remember my sister-in-law commenting, “I can’t believe you brought a dish you had never made before.” Her statement was meant as a compliment and not incredulous by any means. The whole casserole disappeared.
Our EYB library has 4,811 recipes for macaroni and cheese (online recipes) and a whopping 8,535 cheesecake recipes (online recipes). Over the years food folks have declared that Poole’s Macaroni au gratin to be one of the best they have tried. I made it and thought it was just ok. To me, the perfect mac and cheese must not be “too cheesy”, have lots of crunchy bits and be something that is worth the effort and calories.
What makes the best macaroni and cheese for you? Which recipes are your favorites? What about cheesecake? Are you a purist or do you like to shake things up with flavors?
