This week: The best brownie recipes, Valentine’s treats, giveaways, EYBD previews and more

While I am not a huge chocolate fan, my husband and son are chocolate fiends. Anything vanilla or citrus-flavored send my way and I will imbibe until my stretchy pants give up the ghost. So, I don’t bake the types of treats I adore for two reasons: those desserts are not met with the enthusiasm that chocolate garners and number two for the welfare of the aforesaid stretchy pants.

My son recently said while I was battling the flu, “Before you die will you leave me your brownie recipe.” This was definitely not a Hallmark moment, but my son thought he had paid me the ultimate compliment. One of the things that make my brownies successful is to not overbake. I never bake anything for the stated time in a recipe without checking at least 10 minutes early. I also find that adding chocolate chips no matter the amount specified in the recipe is always a good thing.

One of my favorite recipes is Ina Garten’s Outrageous brownies. These brownies never fail and I have made them gluten-free successfully by subbing gluten-free flour cup for cup. (Ina’s new book Modern Comfort Food is being released this October.) Another favorite recipe comes from Justin Chapple, the Salted brownies from Just Cook It which are fantastic (photo above).

For example, our library of recipes includes brownies with dried fruit, lemon, orange, white chocolate, and/or nuts. Above you will find my photo of the Snickering brownie from Extreme Brownies. If you are a brownie lover, I highly recommend this book. I could not find the exact recipe online for you but this version is very similar. A number of Connie’s recipes are available at Delish.com.     I love this article on chocolate and brownies, just in time for Valentine’s Day. I hope you will highlight Mardi Gras dishes soon. The Carnival season has been in full swing since Twelfth Night (January 6), and culminates on the big day. Mardi Gras falls on Tuesday, 2/25/20 this year. I don’t live anywhere near New Orleans, being in the cold, windswept regions of the Great Lakes, but I always try to make my own Mardi Gras fun that day!!!     My long-time favorite brownie recipe is Supernatural brownies by Nick Malgieri which before baking I streak Felicity Cloake’s Perfect salted caramel sauce on the top. Every so often I try other recipes just to see if there is a better one, but I’ve never found it yet.

    I am no where near being a chocolate fiend (except my recent find of LMFY chocolate snacking loaf- wow) BUT put a lemon square , old fashioned date square or pecan pie bar in front of me and watch out.

    HOWEVER, I do make a lot of brownies to share and my top 3 (all of which are VERY popular with family and friends) are Bonnie Stern’s (from Friday Night Dinners), the original Whitewater Cooks version AND yes – BFC’s outrageous recipe.
