Cookbook giveaway – Food52 Genius Recipes

Genius RecipesThe Food52 blog is one of the most popular in the EYB Library. The blog’s first two cookbooks (and an app!) were also big hits. The newest cookbook, Food52 Genius Recipes, is a compilation of 100 recipes based on the “Genius Recipes” section of the blog, where game-changing recipes from top chefs and cookbook authors are featured. We’re delighted to offer one copy of Food52 Genius Recipes to a lucky EYB Member. One of the entry options is to answer the following question on this blog post:

    Just one recipe? Recipes tend to change just small details in how I cook – like how to use particular spices, or that cauliflower can be roasted. Most recent I would choose Jennifer McLagan's Slow-roasted pork belly with fennel and rosemary because it helped me not be so afraid of large pieces of meat.

    I think a basic tomato sauce has been beneficial to how I cook. I have also mastered the olive oil ratio to vegetables for less drenched roasted veggies, which is harder than it sounds! I love everything Food52 does and am excited for the chance to win. Thank you!

    I follow this blog and tuck the tidbits of information away. I'm always learning something new or getting new ideas. My college-age daughter is also hooked. Her repertoire consisted of fried eggs and brownies…then she found Food 52 & Jerusalem and her life changed. ๐Ÿ™‚ She follows the recipes exactly but I usually take bits and pieces from different recipes to create something more unique. I'm currently doing the Pantry Challenge so the Lentil Bolognese is on my list to try this weekend.

    It's hard to pick just one but I notice the my favorites, the big game changers for me, are for baked items: the touch of grace biscuits and the no-knead bread. I've modified the touch of grace biscuits quite a bit so that I am bake them in a cake pan and skip the shaping all together. Both recipes made what used to be project cooking into regularly occurring family favorites.

    Lorna Sass's basic oatmeal recipe, where you just add oats to boiling water, turn it off and cover, and let it sit for 5 min. Made me realize a lot of the standard preparations for certain foods aren't always better.

    I LOVE Food52's site. My favorite of their Genius recipes is Marcella Hazan's Tomato Sauce with Onion and Butter. It's so simple, and SO good!

    I'm not sure if I have tried a genius recipe. I have learned 'oh that's neat' from bread books, and I've been floored by a recipe that involved melting chocolate in with butter.

    I loved Kristen's column on Paula Wolfert's Herb Jam w/ Lemon and Olives. I make it mostly during the winter months when I have to buy herbs in bulk (in I grow some of my own herbs so I only pick what I need). I used to hate seeing all the wasted herbs in my fridge, but now I just whip up a batch of this lovely jam/spread! The best part about it is you can adapt it.

    A suprisingly quick tomato (spaghetti) sauce I found on Orangette. Just a can of good quality whole tomatoes simmered with a halved onion, throw in dried or fresh herbs, add salt and pepper, and mount with butter. Simmer until it tastes golden- 45+ min. I use it for everything!

    I have not seen this book yet. But I will say one thing, in every recipe I have tried weather it be from a cookbook, or an on line recipe from different sources, 9/10 times I will alter the recipe some how. Adding more spices, deleting some spices, adding more of an ingredient, or using less of an ingredient. I never follow a recipe as written. This does not apply to making candy though. I will not tempt fate with those. Also, my mom's own personal recipes I will never experiment with. Those are sacred ground, and should never be trifled with. She was a fantastic cook, and could have written many cookbooks if she had chosen to. But I have her legacy passed down to me in her beautiful handwriting, and they are always to be treasured.

    I have never read the blog – have yet to try a 52genius recipe BUT you can bet I am going to start trialling some of the recipes now. The Marcella tomato sauce may be legendary but it is news to me … and it looks so simple that I might encourage my non-cooking, starving artist in NYC daughter to give it a go, too.

    I've just discovered I can cook if I put my mind to it and the biggest surprise was the "fried eggs in wine vinegar" as it was the first "genius" recipe I actually tried and they were very very tasty and now a firm favourite of the family. Called "Tracy's eggs" in our house. ๐Ÿ˜€

    Not sure if it's changed *the way* I cook so much as changing the frequency with which I make waffles, but Aretha Frankenstein's waffles of insane greatness is one of the small handful of recipes I find myself returning to again and again, and probably the only one I've committed to memory. That said, Marcella Hazan's braised celery is the reason why there is never a sad rotting bunch of celery in the bottom of my crisper, and J Kenji Lopez-Alt's pie crust recipe is jaw-droppingly elegant. Especially when filled with Rose Levy-Berenbaum's blueberry pie filling.

    Not so much a recipe but a guide: Alton Brown's guidance on how to cook steak better. I've avoided making most red meat at home because I had NO IDEA how to do it, and I didn't want to ruin expensive, beautiful pieces of Alberta beef. But NOW– now I'm cooking thanks to a cast iron pan and some open windows!
