    Mark Bittman's Kitchen Express: 404 inspired seasonal dishes you can make in 20 minutes or less – I have this on my kindle and I am always flicking through it being inspired. Fab quick recipes that are always delicious.

    My dad gave me a copy of How to Cook Everything while I was in college and I use it as a basic reference for all sorts of things. I also have How to Cook Everything Vegetarian, but I admit that I don't use it as much as more curated tombs.

    The Food Matters cookbook has tons of great recipes, and Mr. Bittman leaves some recipe choices up to the cook. So – easy to substitute with what you may have in your kitchen or according to your own tastes.
