Cookbook giveaway – Mexican Flavors

Mexican FlavorsMexican Flavors is the newest cookbook by prolific author and acclaimed cooking school instructor Hugh Carpenter. The book includes classic recipes such as guacamole and tortilla soup, but there are many surprises and twists on the classics as well. Chile rellenos are filled with a pine nut goat cheese herb stuffing and then smoked on the barbecue. Enchiladas have intriguing fillings of duck, shrimp, or shiitake mushrooms and are a master class on fail-safe ways to create perfection.

Hugh provided a synopsis of the chapter on chile peppers to EYB members, and we are delighted to offer five copies of Mexican Flavors in this contest. Enter soon; the contest ends on September 23.

    My favorite Mexican food is enchiladas, I can eat them, morning, noon and night. If they are especially good, I'll even eat them as dessert. Can you tell I like enchiladas?

    I have fallen in love with fish tacos in soft tortillas these past few years. I love all the various combinations of veggies and other toppings you can add to the grilled fish.

    I like it all, because I grew up in Mexico! I make an excellent mole poblano. At restaurants I find myself gravitating to chiles rellenos because they're a bit of a mess to make at home. My biggest problem is finding restaurant food in the U.S. that reminds me of the food I grew up with in Mexico City. Much of the Mexican food and cooking here in the Midwest is basically norteño, where most of the immigrant population comes from. Some of it is excellent, but it's definitely a different region of Mexico and the ingredients and flavors differ from those I long for. But we've now gotten some more upscale Mexican restaurants here in Kansas City that serve food more reminiscent of the cooking of central Mexico. And it's now easy to buy all the ingredients you could want here, so it's possible to make almost anything I wish! ¡Viva México!

    This is a tough question. I love fish tacos. The best fish tacos I had was at Alexanders in Los Cabos, Mexico. It was grilled mahi mahi, that was so delicate that the fish fell apart in my mouth before I could chew it. It was shocking how such a tender piece of fish could pack so much flavor.
    But my favorite mexican dish has to be guacamole. I love it when a dish could celebrate and highlight humble ingredients. And there is no ingredient more humble and simple as the avocado. Guacamole can be made many different ways; infuse countless flavors, be whipped up at the last minute but taste like it was conceived for weeks; and none of this would be possible without starting with the modest avocado.
