A Change of Appetite

 A Change of Appetite is the 7th cookbook from London-based food writer and cookbook author Diana Henry.  We are delighted to offer 3 copies of the book, thanks to the publisher Mitchell Beazley/Octopus Publishing.

The book contains the recipes that Diana Henry created when she started to crave a different kind of diet – less meat and heavy food, more vegetable-, fish- and grain-based dishes – often inspired by the food of the Middle East and Far East, but also drawing on cuisines from Georgia to Scandinavia.

Diana has written a fascinating article on her blog about the process involved in writing the cookbook. With her kind permission, we have excerpts here

    We have moved to less meat and more fish and vegetables over the past 15 years. I especially like to do stews and soups that are heavy on vegetables and interesting spices for the winter and salads in the summer.

    A fish recipe with loads of flavour. Something like Angela Hartnett's cod tagine with chickpeas is perfect – has lovely fresh cod, veg, Harissa for flavour and chickpeas for carbs without being heavy. Made a lovely salad for lunch with some home grown purple sprouting broccoli – light and really tasty.

    Ohh, Diana Henry's books are just amazing, Salt, Sugar, Smoke is one of my favourites!

    My go to light dish is always a stir fry made with 1 tsp. of gochujang and 2 tsp. soy sauce which makes a delicious, slightly spicy sauce so it has masses of flavor to satisfy.

    few things epitomize "light fare" for me more than cucumbers…cucumber soup, cucumber and watermelon salad, tzatziki sauce over cucumbers and tomatoes with crunch pita bits as a topping. The Ottolenghi books have a lot of salads incorporating cucumbers and I would turn to those when seeking something light. I also recently bought my first mandoline, and I'm excited to use it to try making some zucchini noodles as a substitute for pasta!

    Favourite light and healthy dish is baked salmon with steamed new potatoes and watercress salad. Or Hoisin duck-breast with steamed rice and broccoli.

    Salmon, when wild is in season, cooked medium-rare with nothing more than some olive oil, coarse salt, and freshly cracked pepper. Meyer lemon wedges to squeeze over the fish. A simple salad on the side. Something light like a red butter lettuce works well. that's our favorite light and healthy meal.

    Larb, tabbouleh, and olives. I've been cutting back drastically on dairy and refined grains/sugars recently. It's been great but when I want a salty snack, I head right for the spicy olives.

    Lime leaves and citrus zest have proven such sanity-saving flavor-boosters for me. If I'm hungry but not in the mood for something Light and Refreshing, which is what I need to be eating, I find that citrus zest really helps to round flavors out and tie them together to be interesting and moreish.

    I don't have one dish per se, but tend to eat primarily soups and salads, mostly vegetable based. One of my latest go to light dishes is from Michelle Obama's cookbook, the Collard Greens with Smoked Turkey http://www.eatyourbooks.com/library/recipes/1232333/collard-greens
    and I love roasting loads of root vegetables with a bit of olive oil, salt, pepper and fresh herbs.

    Grain based salads. Pick a grain (I love farro and barley, but quinoa or brown rice also work great), add a vegetable (roasted squash, roasted broccoli, etc.). Then add a dressing, which is usually lemon and oil based, add a little bit of a crumbled cheese like feta or goat cheese and some sort of nut or seed for crunch. It's a healthy meal that is easy and completely filling, not to mention customizable for your own tastes.

    I always make or buy a green juice. I had one today made with collard greens, celery, orange, cucumber, spinach, parsley and pear. It has to have some fruit though, or I can't drink it.

    I search the fridge for cooked grains and beans, vegetables raw and/or cooked, and the random sauces that accumulate there. That plus maybe an egg, HB or raw, will make a simple salad or stir fry that as light as I need, made quickly and helps manage the potential of food waste.
    I am interested in the premise of the book, and look forward to seeing it (one way or another) and cooking from it.

    Very simple broiled or grilled fish with a light lemon butter. Easy, fast, and you can do it with literally any fish and it's great. Throw in a few capers and it becomes heaven.

    I head toward dishes based on grilled shellfish and fish when I'm looking to get away from heavy meals. I usually plan a meal to include a light vegetable based soup as we'll. That helps to make us feel full without weighing us down.

    Composed salad. Fresh greens lightly dressed topped with a little bit of a lot of things. Generally, presented with the greens on the bottom and then the 6-7 components in wedges from the center. Typical might be asparagus, radishes, carrots, leftover steak, tuna or a hard-boiled egg, pickled red onions, green beans, tomatoes, roasted red peppers, marinated artichoke hearts or mushrooms. These dinners should be colorful; eating the rainbow.

    We make a salad that we saw in some magazine ages ago, the dressing is so simple and healthy:

    1 ripe avocado
    some chopped fresh tarragon
    some blue cheese crumbles
    lemon juice, enough to make a dressing
    salt & pepper to taste

    mix everything together and serve on your favorite salad!
