Taste Canada Awards long list; UK Guild of Food Writer’s short list, new blogs indexed and more
May 10, 2024 by JennyMark your calendars – the new season of The Great American Baking Show begins airing on Roku on May 24th. Paul Hollywood and Prue Leith both return as judges with Ellie Kemper and Zach Cherry returning as hosts.
While we are thinking baking, I want to tell our Members more about Sift: The Elements of Great Baking by Nicola Lambs. In Sunday’s Food News post, Darcie shared that the Happy Foodie (the culinary website of Penguin Books UK) announced a new baking series from Nicola called Baking Basics. The first article covers how to make the perfect Victoria sponge and the second how to make perfect chocolate chip cookies! The following recipes are available from the book: Roasted strawberry Victoria sponge and Miso walnut double-thick chocolate-chip cookies (photographs below).
In this masterpiece of a book, Nicola delivers 115 pages of baking knowledge from the science behind ingredients and the role they play in baking, swaps for ingredients, yeast and fermenting facts and so much more. Then she shares recipes that are organized as follows: base recipes (doughs to pastry); afternoon bakes (recipes that take one afternoon or up to 4 hours); a day (recipes that take over 4 hours or have multiple steps); a weekend (recipes that need to be split over multiple days) and extras (brown butter, preserves, etc). Timelines are given for each recipe. The index of the book shares the recipes you will find here so I won’t repeat those. This is an absolute must-have for all bakers and one that will not leave my library of books.
Please note that the US edition of Sift will be published in November of this year and that Nicola’s tour in the UK is shared on our Calendar.
