The last two weeks: Rice, rice and more rice, EYBD Previews, cookbook giveaways and more

Hello members. We skipped the roundup last week due to the monthly newsletter’s publication as we like to keep our emails to our members to a minimum. (And, if truth be told, September’s new cookbook review was a bit exhausting and I needed a few days to recover!) This week, I am going to write a bit about rice. Over the last year, rice has become a comfort food in our home. Even a plate of hot white rice really hits the spot when you need some to fill your belly and warm you up. My 17 year old son is now requesting bowls of hot rice after he gets home from a long shift. He likes loads of soy sauce as does my husband (me not so much). Lately, I’ve been adding some chopped up pickled ginger to the rice cooker (my favorite brand of cooker) and it has become a staple in our kitchen. Sometimes I will trade out a portion of the cooking water for an equal portion of coconut milk and then add lime zest after the rice is cooked. Other examples of switching things up a bit is to stir in peas, caramelized onions or almonds after the rice cooker has done its job.

I could live on steamed rice and The very best peanut sauce, I do love peanut sauce on noodles too, but on rice it is heaven. While I am not a fan of take-out fried rice, I do like to make it at home. Take-out fried rice, at least here in the Denver area, is ladened with soy sauce and greasy. My preferred method is just a quick sear in a wok (or skillet), some egg, and a tiny dash of soy sauce and sesame oil. Sprinkling with togarashi is nice as well.

There are over 95,820 rice recipes (online recipes) in our Library. Of course, there are many cookbooks that have rice as a part of the title but a few favorites of mine are: Seductions of Rice and The Amazing World of Rice. The Ultimate Rice Cooker Cookbook and The Rice Book are member favorites which I may have to look into buying. Note: The Rice Book will be re-released next September.

Let us not forget rice pudding (online recipes). I am a purist. I prefer a simple vanilla rice pudding like the one above from Delicious Magazine (UK) or something that doesn’t take away from the perfection that is vanilla and warm creamy rice.

    This is my family’s favorite quick rice bowl. I make the rice in a rice cooker and sub in 1/3 quinoa. It’s healthy and delicious!

    One of my first favorite cookbooks I used when I started cooking more was by Rick Rodgers- On Rice. I am going to look into some of the others you mentioned that I don’t have yet because I love rice too- thank you!
