  Had a cabeza de vaca taco at a small stand in Oaxaca last year. Best taco I've ever had.

  Oh, this is a hard one – I love chicken in a taco or most any meat, but the best taco I've ever had had a strip of fish in it, battered and fried golden and topped with some crunchy, tangy veggies. Mouth watering just thinking about it!

  Fish tacos, hands down! I love htem with chipotle sauce, shredded cabbage, avocado, lots of cilantro, and a good squeeze of lime.

  I love many tacos but my all-time favorite has to be the breakfast taco – I like mine with scrambled eggs (not too much), black beans, cheese, avocado, and REALLY spicy salsa

  My favorite filling of the moment is actually smoky sauteed greens and a little bit of hard cheese. Best vegetarian taco ever. And I'm not vegetarian! I thought they'd be boring, but no. A little dollop of whole beans wouldn't go amiss either.

  The two main ingredients that are a must have for me in tacos are sour cream, and orange bell peppers. I love my tacos to have chicken in them. The rest of the filings I vary.

  I think a great taco filling is strips of rare steak with chipotle bbq drizzle, a little Monterey Jack cheese, some sweet corn and hot salsa and a big dollop of sour cream. You can keep the guacamole, never been a fan…it tastes like dirt!
  Have been toying with the idea of dessert tacos, speculoos flavour taco filled with marshmallow, chocolate chips, ice cream, and a salted caramel drizzle. Yum.

  Favorite? Um…I recently tried crispy tripa (tripe) and I was skeptical, but it was one of the best things I've ever tasted. But otherwise, I mean, what ISN'T my favorite thing on a taco? Mushrooms, chorizo, chiles rellenos, beans, cheese, carne asada, carnitas, pollo adobada, barbacoa, lamb, literally anything al pastor, cabeza, buches, lengua…
