Cookbook Giveaway – Soup Nights

Soup Nights: Satisfying Soups and Sides for Delicious Meals All Year by Betty Rosbottom is the second book the author has penned dedicated to soup. Her first title Sunday Soup: A Year’s Worth of Mouth-Watering, Easy-to-Make Recipes is indexed for Eat Your Book members.

    Love soup! There's this great recipe involving red lentils, onions, garlic, cumin, thyme, dried apricots (yes!), tomatoes, and lemon that's just divine. . . . Haven't made it in such a long time, though! (Perhaps this weekend?)

    I love all types of soup–but if I had to pick one, I'd go with pho because there are so many lovely varieties. And Andrea Nguyen has a pho cookbook coming out Feb. 7–so excited!

    I must say that the best soup might be the most simple… Leek + potato with a good dash of pepper and, when I want to "up my game" a little, a good glug of white wine. Just lovely.

    Homemade Potato Leek Soup. I grew up in the 60's and it was a frequent meal n our household of seven. Inexpensive to make, hearty, and delicious .I still enjoy it often; I never tire of it.

    Old school split pea with ham, especially cooked in my pressure cooker. I'm also a fan of tortilla/enchilada soup, but it's got to be creamy. Same with chicken soup, creamy and filled with chunks of celery, carrots and mushrooms is best, better than noodles any day.
