The Turkish Cookbook – Promotion

Title:   The Turkish Cookbook Author:  Musa Dağdeviren About the author:  The chef has been labeled the savior of Turkish cuisine and is the brilliant mind behind Çiya Kebap and Çiya Sofrasi on the Asian side of the Bosphorus Strait in Istanbul. He hails from a long line of farmers and bakers, who began working in his uncle’s bakery at age five. The Çiya Foundation was formed by Musa to train young culinary students in traditional folk cooking styles. The chef and his work has been highlighted on Netflix’s Chef’s Table.     Our takes you inside this title and features the following

 

  What’s to love
  • It is a Phaidon title. Cookbook lovers know that Phaidon publishes tomes that capture the region, restaurant or soul of the chef featured.
  • Brilliant photography of the markets, landscape and dishes of Turkey
  • Detailed recipes and narrative in each chapter. For instance, the first chapter covers soup in Turkish culture, Tarhana (a dried food ingredient based on a fermented mixture of grain and yoghurt or fermented milk. Dry tarhana has a texture of coarse, uneven crumbs, and it is usually made into a thick soup with water, stock, or milk) and as a social memory. This background is then followed by pages of recipes from Widow’s soup to Wedding soup.
  • Dishes are rich in tradition and culture and while some have lengthy ingredients lists most of those can be procured at your local supermarket. Learning and experiencing a new cuisine will not be a fifteen-minute meal.

    Kibbeh (icli kofte) – I love Turkish food. It's probably my favourite of any ethnic cuisine. I was in Istanbul, and they have the absolutely best breakfasts. I chose this dish to make because it is the favourite of one of my Turkish friends.
