Makes 1 loaf – Active time: 15 minutes – Total time: 1 hour, 15 minutes
In 2020, banana bread was Google’s most searched recipe. In fact, it’s ranked at or near the top of our most desperately sought-after recipes for each of the past 20 years, meaning that banana bread isn’t just having a moment, it’s having an entire era.
And why the heck not? Banana bread is delicious, quick to make at home, and involves fruit, so we can feel a little better about eating it for breakfast. For the best, the easiest, the don’t-make-it-harder-than-it-has-to-be banana bread, The Modern Nonna’s recipe should be on repeat. Just mash, whisk, stir, and bake, and in an hour you’ll have a piping-hot loaf of banana goodness to feast upon.
- 3 ripe bananas
- 2 large eggs
- 1/2 cup sugar
- 1 teaspoon pure vanilla extract
- 1/4 cup of almond milk, or any milk
- pinch of salt
- 1/2 cup avocado oil, or any oil
- 1 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- handful walnuts or chocolate chips (optional)
1. Preheat oven to 350°F. Add your bananas to a large bowl and mash them. Add eggs, sugar, vanilla, milk, salt, and oil, and whisk it up.
2. To the same bowl, add your flour and baking soda and stir it up. If using, stir in walnuts and/or chocolate chips.
3. Pour the batter into a lined loaf pan with parchment paper and bake for 1 hour or until golden.
