Tarunima Sinha’s glorious cake and biscuit creations are the stuff of Instagram dreams. And yet her baking journey started only when she came to the UK from northeast India in 2001, repurposing an 8-inch/20cm chapatti tin from her childhood as a cake tin. Her resume includes working for the great Asma Khan at Calcutta Canteen!
Now, as @mylittlecaketin, she has devised breathtaking recipes for everything from sponges to lamingtons to meringues and friands. In her stunning debut cookbook, My Little Cake Tin, Tarunima takes you through every cake recipe you’ll ever need – covering sponge methods (including vegan and gluten-free), batters, classics, seasonal everyday, buttercream cakes, beautiful cakes from around the world, “cake but not a cake” and free-from cakes. The bonus is that all of these creations require a single cake tin.
Measurements are provided in both weight and volume and the author has done a remarkable job with the information she provides the reader. She begins with the basics as most baking cookbooks do and then follows with instructions for various batters and techniques such as reverse creaming method, chiffon cake method, hot milk method and more. Following that section, flavourings and fillings are covered before providing advice on storing and transporting cakes. After this wealth of knowledge, the recipes begin and those recipes (and photographs of same) look brilliant!
