Philip Khoury is an award-winning pastry chef known for his innovative and delicious creations made from plants. Originally from Australia, he started his career at Quay as an apprentice pastry chef (2012-2013), one of the country’s most highly acclaimed restaurants, before becoming Adriano Zumbo’s right-hand and launching hundreds of patisserie lines in his native country (2015-2018). Over time, he began to realise the wider food industry’s unsustainable reliance on animal exploitation and decided to focus on creating plant-based desserts that were not only delicious but also environmentally friendly.

Khoury is currently the resident plant-based expert and head pastry chef at Harrods in London, where he has introduced plant-based and allergen-friendly patisserie in addition to the iconic made-in-house ranges. His dedication to sustainability and creating desserts that are both ethical and indulgent has earned him a reputation as one of the most innovative and forward-thinking pastry chefs in the industry.

In his debut cookbook, A New Way to Bake, he covers a brief history of baking before setting out the Plantry, where the main ingredients and their functionalities are explained. Full of delicious bakes, from Apple pie to Banana bread, to Lamingtons and Tiramisù, there are sweet treats for any occasion. Recipes are broken down into digestible steps, with explanations as to why steps are important, and tips along the way too. Plus, there are even QR codes to help navigate through the recipes.

Written in an informative yet approachable style, A New Way to Bake is a comprehensive guide that arms readers with a new outlook and tools to bake a better future. Once you have armed yourself with some plant-based ingredients, you will find inspiration in the recipes contained in this gorgeous book. If you look at the ingredients in most of the recipes – they are ones that are available at any market or online – plant-based milk, coconut oil, agar-agar, and tofu.

    As a vegetarian who feels so much better when I remove dairy from my diet, this plant-based book from a trained pastry chef sounds amazing. While everything sounds delicious, the most exciting thing for me is his Exotic Clear glaze recipe. So many baking books of mine have cakes calling for gelatin containing glazes and I haven’t been brave enough to try baking them making my own substitution. Having a tested sub in my pocket could open up a lot of new recipes for me.
