The Nutmeg Trail is everything I’ve come to expect and treasure from Eleanor Ford. Through 80 spice-infused recipes, spectacular images, and a mouthwatering culinary journey along the ancient spice trail, the award-winning author’s luscious new volume reveals how centuries of spice trading and cultural diffusion changed the world’s cuisine and how to best stock and enjoy spices in your own home. 

A history of spices including how they changed the world and outlining the cultural differences along the spice routes begins our spice journey. Eleanor then follows with “cooking with spice”. Here, she gives us a tutorial on choosing, using and layering flavours. Spice characteristics are designated on pie charts setting out the various qualities each spice has – i.e., floral, woody, citrusy, etc. Some spices have a combination of many characteristics. There is a lovely table of spice blends (EYBD Preview pages 4-5) along with a spice palette by country/cuisine. All of this information is presented before we even get into the recipes.
