    Favorite cocktail… there are so many. But let me highlight just the one cocktail that changed my life; the caipirinha. A humble Brazilian drink of just three ingredients (as the base recipe) lime, sugar and Cachaca. Just like any spirit there are both good and bad levels of quality for Cachaca but unfortunately due to taxes and markups outside of Brazil retail prices end up pretty close to each other so price isn’t necessarily the only indicator of quality. So I’d recommend that you do your best to use an artisanal Cachaca that was distilled using pot stills (like scotch) rather than column stills (like vodka). For the caipirinha I prefer a silver (un-aged) Cachaca or one that is 1-2 years aged in barrels. So here’s the basic recipe: take a heavy sided rocks glass (9-10oz) and to the bottom add 1/2 a fresh green lime cut into a strips along the vertical axis. I prefer to keep them all attached by not cutting through completely. Place the half lime into the bottom the rocks glass and add 2 generous bar spoons (about 1 level tablespoon) over it. The sugar needs to be superfine white sugar, aka caster sugar which is what you would find in Brazil. Regular crystallized sugar won’t dissolve in a drink, brown sugar imparts a different flavor from the molasses and powdered sugar contains corn starch so only superfine sugar will do. Simple syrup is not going to work well either because your next step is to muddle the lime and sugar gently till you have a runny sugar and lime juice syrup. It is important that your muddler have a smooth end; a bumpy end will grind up the lime skin and make for a less than perfect cocktail. From there you just have to fill your glass to the brim with ice (cubes not shaved or crushed) and add 1.75 oz (50ml) Cachaca and stir till cold. A good caipirinha will start out a little strong but as the ice melts it becomes softer and less sweet until (if you did your job right) nothing is left but the lime and the strong desire for another. PS ALWAYS cut your limes first before you start drinking caipirinhas.
