This week: Best pancake and waffle recipes, fall/autumn cookbook previews, and more

Soon in the northern hemisphere, many will begin the search for grilling and other warm weather-related recipes. For me, at least for a few more weeks, I am indulging myself and our members in comfort food. I am so not a summer person, give me the crisp cool days of autumn or the blistery winds of winter and I’m content. If ever there was a time for comfort food, it is now.

Pancake recipes have myriad variations from savory to sweet, from scallion pancakes to potato pancakes. For purposes of this roundup, I will focus on breakfast/brunch pancakes. EYB has 5,522 pancake recipes in our library (online recipes) with versions that range from sour cream, blueberry, chocolate chip, buttermilk, and Ebelskivers. If you don’t own an Ebelskiver pan, (UK link) rectify that immediately and start indulging in these fluffy Danish pancakes for breakfast, brunch, or dessert. They are a breeze to make – once you get the flipping under control – and provide a definite wow factor (have two chopsticks or skewers handy to aid in flipping these delightful treats).

When talking pancakes, my personal favorite recipes are the Simply perfect pancakes from King Arthur and Smitten Kitchen’s Oatmeal pancakes. I am team fluffy pancake with crisp edges drizzled in maple syrup and I love the texture and flavor of an oatmeal pancake.

There are 2,266 waffle recipes (online recipes) (in the breakfast/brunch category). Waffles are just as versatile as their cousin the pancake. Some cooks prefer yeasted waffles, while others prefer Belgian waffles or a classic waffle. Let us not forget the Liege waffles made with pearl sugar and take some effort. Wikipedia has a great article outlining waffles from around the world as does the tripzilla site.

My all-time favorite recipe (and I’ve tried many) is the Lighter-Than-Air Waffles from the Saint Louis Days, Saint Louis Nights: A Culinary Tour of the Gateway City book. I am not one for community cookbooks normally, but this book (I was born and raised near St. Louis) is a treasure trove of fantastic recipes. We are sharing this waffle recipe with you because we all need a fantastic crispy waffle recipe in our arsenal.

Lighter-than-air waffles: Yield 10 to 12 waffles

  • 2 cups sifted flour with a dash of salt
  • 3 eggs
  • 3 cups milk
  • 1/2 cup (1 stick) butter melted
  • 4 tablespoons baking powder

Put flour and salt in a bowl. Make a hole in flour mound. In a separate bowl, mix eggs and milk. Pour into flour, add melted butter, mix well. Just before baking, add baking powder; mix barely, the batter will rise. Cook in waffle iron according to manufacturer’s directions. Serve immediately.
