This week: The best roast chicken recipe; 70,000 cookbook recipes available online and more!
February 21, 2020 by JennyWhat do you think of when you hear Sunday supper? For me, roast chicken ranks high for our family as a meal that we all enjoy. The beauty of this meal is that it is relatively simple to master. My son could eat chicken, gravy, mashed potatoes and popovers every single day. Throw in my simple leftover bread dressing and he’s in heaven.
Ina Garten’s signature dish for Friday night supper with Jeffrey is her Perfect roasted chicken. The video below demonstrates her “how easy is that” method of making the perfect bird.
My favorite chicken recipe is Zuni roast chicken with bread salad. Even when I don’t follow the full Judy Rodgers’ recipe, I love roasting the bird on thick slices of sourdough bread. After removing the chicken and draining the juices into a saucepan to make a sauce, I put the pan with the fat-soaked bread under the broiler for a few minutes to crisp up. Our family fights over that bread! And almost every time I make chicken my go-to sauce is my friend Kim Foster’s The best roast chicken with garlic and herb pan sauce. The first photo below is my chorizo rubbed chicken and the second simply made with herbs and citrus. After a meal of roast chicken, there is always stock simmering the next day and soon after either soup or another family favorite – chicken pot pie.
