The author’s latest book, Cool Beans, catapults the legume into the limelight. Answers to questions we didn’t even ask are provided: to soak or not to soak, seasoning concerns, the best way to cook beans (stovetop or pressure cooker), the proper storage containers, and more. A bean glossary along with a breakdown of spices and herbs is shared. Worried you won’t be able to find a variety of bean or ingredient? Fear not, the ingredients needed for most of the recipes can be located in any major grocery store and if they aren’t available, a section on sources comes to the rescue.
Yonan pays proper homage to Rancho Gordo for being the best thing to happen to beans and we agree. Before Rancho Gordo, many of us were familiar with baked beans and chili beans and now we know there are a plethora of varieties out there to be enjoyed. Credit is also given to the magic of the Instant Pot in making long-cooking beans a more time-friendly method of preparation.
The recipes in this title use a colorful mosaic of beans from Lady cream peas to red lentils. This pot makes meal-prep easier by making hearty one-pot meals, as well as boiling pasta and beans without needing a colander. Even having a colander hanging from my pot rack, I find myself taking my boiling pot to drain without remembering to put the colander in the sink first. I have to put down the hot pot on a trivet and then bring the colander over. Many times, my kitchen sink is littered with dishes from meal prep causing me to have to juggle things around to get the colander in place. I confess to sometimes tipping the colander in at an angle and then cursing myself as I watch beans, pasta or potatoes sliding into the abyss. This straining casserole alleviates those steps.
