“The Queen of Southern Cuisine,” Nathalie Dupree, has mentored many female chefs during her impressive career. Ms. Dupree turns 80 on December 23rd and this week her “chickens” (the women she has taken under her wing) are honoring her with a celebration at the James Beard House in New York. Further proof of the selflessness of the beloved author and chef is found in her book’s dedication: “to Cynthia, and to all the chickens who have made me what I am today.” Right there, that is class.
In her newest book, Nathalie Dupree’s Favorite Stories & Recipes, she shares the recipes she dreams about and cooks regularly. Recipes from her “chickens” and friends are sprinkled throughout the title. Dishes include Lemon fettuccine, Pat Conroy’s Spinach tortellini salad, and Lemon-lime pot roast with tomatoes and garlic. As usual, I am drawn to the desserts chapter where one can find recipes for Angelina’s Mont Blanc, Classic caramel cake and Rose’s best all-American apple pie (Rose Beranbaum, that is).
Wrapped around the recipes are Nathalie’s stories such as “Peanut Butter Sandwich to Go” and “Heroine’s Feast.” Here, you are given the entree (the recipes) and the gravy (the stories), both of which deliver an enjoyable, satisfying meal.
If you are new to Southern cuisine, you need at least two of the queen’s books, this one and Mastering the Art of Southern Cooking (although I do love Southern Biscuits as well) in your collection.
