Ramen is a Japanese dish. It consists of Chinese-style wheat noodles served in a deeply flavored meat or fish-based broth, often with soy sauce or miso, and finished with a combination of toppings such as sliced pork, nori, and scallions. Most of us are familiar with the cellophane wrapped, economical packets of ramen that tons of college kids and those who are longing for payday have survived on for decades – this is not that ramen.

satisfying flavours. There are also instructions for making your
own base stocks from chicken, pork, vegetables and seaweed, and
advice on the different kinds of noodles, a guide to tare and other
flavourings, and topping ingredients to try. With gorgeous pictures
every recipe also has a nutritional breakdown.
Just in time for Colorado’s latest blizzard, I have a pot of broth
simmering for ramen tomorrow. The only problem is figuring out
which delicious recipe I should make.
