August 22, 2018 by JennyWhen I first moved to New York, I would wander the streets after work looking for adventure. I loved visiting groceries such as Fairway and Citarella. Those shops were like a magical wonderland filled with spices and ingredients this midwest Alice had not yet laid eyes upon. Citarella Fine Foods is the seafood spot in Manhattan and at it’s helm is Joe Gurrera, who, of course, knows fish. After years of hearing that people were afraid to cook fish, Joe decided to remedy that situation. The result is a beautiful book entitled Joe Knows Fish: Taking the Intimidation Out of Cooking Seafood.
Joe begins with with the basics such as timing, seasoning, where to start your seafood adventure. Chapters are organized by method – Grill, Bake & Roast, Broil, Saute, Poach & Steam, Fry, Toss with Pasta, Chill & Eat Raw, Savory Sides and Classic Seafood Sauces. The author ends with a chapter on how to prep fish & seafood as well as his seafood kitchen essentials. An abundance of photographs fill the pages with approachable recipes that can be tackled by anyone even those who question if Chicken of the Sea tuna is chicken or fish.
My son and I love seafood but I seldom make it for family meals as my husband has a fish phobia. He blames this fear on his mother who allegedly left a freshly caught fish sans any wrapping in the freezer. Jim states that staring into the lifeless eye of that fish icicle for months killed any desire he may have had to try seafood. So while I love seafood, I don’t often cook it at home save those rare occasions when my husband is out of town. This book is the perfect title to seek out on those opportunities to properly and expertly prepare seafood.
