Lucky Charms Brownie Treat

Lucky Charms®’ has a limited edition cereal out now that contains a  marshmallow shamrock. Why am I telling you this news on pi(e) day? Because this shamrock laced cereal is perfect to create a special St. Patrick’s Day treat. I whipped up these bars in no time and while they definitely fit into the ugly but delicious category kids love them. My son and our neighbors’ three girls gave them two thumbs up (or 8 in total). 

Grab a box while they are available to make these bars for this weekend and while you are at it have fun with your kids setting up a leprechaun trap like I did above.

Big news from the cereal maker, for the first time in a decade, Lucky Charms® has a new permanent marshmallow shape – the unicorn. I have plans to make a blondie based bar with those cute unicorns and I know kids will flip over them.

To make these bars you will need: 

For the brownie layer:

Your favorite brownie recipe or
   Ghiradelli’s brownie mix (this is the only mix I will ever use.)

1 11.5 oz. box of Lucky Charms® (set aside a few cute marshmallow cereal shapes)
1 12 oz. jar of marshmallow cream
4 tsp. of butter

2 ounces of chocolate chips melted 

Using non-stick spray, spray the bottom and sides of a 10 x 14 baker. Place a sheet of parchment paper inside baker, and spray that sheet as well.

Make your favorite brownie recipe or follow the instructions on your box mix. Spread the batter in the 10 x 14 baker. Bake at 350 for approximately 20 minutes and check for doneness. Pull out and set aside.

Place the marshmallow cream and butter in a microwave safe bowl and microwave for about 30 seconds until softened. Add the cereal and mix well. I used my hands because this stuff is messy to scoop and place the mixture over the baked brownies. Press lightly until the layer is even. Sprinkle the marshmallow shapes you had set aside over the top. 

Melt 2 ounces of chocolate chips and drizzle over the top.

Allow the bars to set up for a few hours and then using a sharp knife cut into bars. I also took the edges and crumbled into bite sized snacks.
