An interview with Rachel Khong

Lucky Peach Magazine has published its final issue, and as part of its last hurrah, also put out a cookbook titled All About Eggs: Everything We Know About the World’s Most Important Food a joint effort between Rachel Khong and the Lucky Peach editors. 

More than a recipe book, All About Eggs explores the cultural significance of the egg – a food eaten all over the world, in a self-described “quasi-encyclopedic ovarian overview”. The book includes essays, anecdotes, how-tos, and, of course, recipes for eggs from chickens, ducks, and other birds. 

Recently the NYT’s Melissa Clark sat down with Rachel Khong to discuss All About Eggs. The interview discusses a number of items, including the similarities and differences between egg recipes in diverse cultures. Khong also explains that the while the cookbook is about eggs, it is also about humankind and our connection to one another. As a bonus, there’s a recipe for Scotch Eggs thrown in at the end.
