Fabio’s 30-Minute Italian – Review, recipe and giveaway
August 24, 2017 by JennyFabio’s 30-Minute Italian: Over 100 Fabulous, Quick, and Easy Recipes by Fabio Viviani proves that 30-minute meals can be delicious and packed with flavor. The adorable Top Chef favorite (at least he’s my favorite) has written three prior cookbooks Cafe Firenze, Fabio’s Italian Kitchen and Fabio’s American Kitchen (of course all on my bookshelf).
Here in his new title, he delivers recipes for family dinners that can be created in roughly thirty minutes. The chef is now a family man – married and with a child – thus he wanted to focus on meals for busy working parents.
Beef Pizzaiola with Burrata and Peppers, Cremini and Shiitake Roasted Mushroom Bisque with Rosemary “Chips” and White Chocolate Soufflés with Milk Chocolate Sauce are a few options for quick dinners and desserts. Fabio also offers recipes for making your own pasta (including a gluten-free recipe) that can be made in the 30-minute time frame as well as a section on basics such as herbed butters, vinaigrettes and more.
I made the Oven-Fried Chicken with Balsamic Chile Ketchup (didn’t make the ketchup this time) which was a breeze to throw together and everyone loved it. Besides being healthy – it was big on flavor. There are so many tempting approachable dishes in this title – it should be come a go-to book for weeknight dinner.

Garlic and Honey-Marinated Avocado, Mango and Roasted Chicken Salad

Here’s something really nice to do with leftover chicken or turkey, but if you don’t have it on hand-and don’t feel like roasting a chicken to create “leftovers”-buy a rotisserie chicken from the supermarket. The salad is also good with leftover pork. Here I make enough for four for lunch or a light supper, but if you want to feed larger numbers, double or triple the recipe. It’s easy and so good with a grilling menu. I love mayo, but it’s overused, especially in the summer, and so here I rely on avocados for silky smoothness.
¼ cup honey2 cloves garlic, grated
2 ripe avocados, peeled, pitted and cut into large cubes
3 tablespoons fresh lime juice
½ cup baby kale
½ cup baby spinach
½ cup mixed greens
½ cup olive oil
1 cup shredded roasted chicken*
1 ripe mango, peeled, pitted and diced
1 large orange, pith removed, divided in segments
1 shallot, thinly sliced
Salt and pepper
Toss the honey, garlic and avocados together to coat the
avocado.
Combine the lime juice, kale, spinach, mixed greens, olive oil, chicken, mango, orange and shallot in a large bowl until dressed. When dressed, add marinated avocado, season with salt and pepper to taste, and toss until just combined
*As a side note, you can use leftover turkey, game hen, or pork with this recipe for a fast and easy substitution.
