So hard to choose, would be happy to make most recipes. One that jumped out at me was Red wine risotto with carrot purée! Sounds amazing! We have eaten at Del Posto, lunch during NYC Restaurant week and were over the moon! Will have to add this book to my collection one way or another!

Slow cooked lamb alla Romana because I've never cooked baby lamb and whole animal dishes are so interesting. Also it sounds like the perfect accompaniment to the puntarelle salad that's recommended with it.

  • Sfgordon  on  January 30, 2017

Roots and fruits sounds pretty wonderful, as does the seared scallops with sunchoke puree. I always love sunchokes when I've had them at restaurants but I've never tried cooking with them myself.
