    I love a sweet potato casserole, but for daily consumption I just love them roasted! No oil needed!

    I like baked oven fries, thick cut! I slice the potato in 8 wedges and coat them with olive oil, salt and pepper. They're baked at 425 for about 45 minutes, flipping every 20 or so. Lately, I've been coating them with duck fat and have been pleased with the results. They come out of the oven crispy on the outside, light and fluffy on the inside!

    I can eat potatoes almost any way but my favorite is homefries with minced onions and paprika. the secret is to cook them with a slight crunch but moist inside. Yum!

    I boil fingerlings to a point where the are soft, smash them individually on a pan, sprinkle them with salt & iemon pepper, then bake until crispy. Yum!

    sliced thin with onions and garlic and a bit of butter and then grilled in a cast iron pan until the bottoms are crispy but the middle is almost creamy. Insanely yummy.

    Love potatoes in any form, but simple is usually better. My favorite preparation is to toss small fingerling or quartered red potatoes in olive oil and coarse kosher salt and then roast in the oven at a high temp. I like them crisp on the outside and creamy soft on the inside.

    I have a recipe from Fit For Life which I absolutely love. It is their Potato Boats. You can find the recipe here: https://recipes.sparkpeople.com/recipe-detail.asp?recipe=1098699. It sounds a bit odd but it is amazing! We sometimes add extra cumin.
