The cupcake craze that peaked a few years back may be on the wane, but there hasn’t been anything that has taken its place. One baker hopes to change that: Christina Maria Chambers is on a mission to elevate the status of tarts. Through her recently-launched company, Black Pearl Tarts, Chambers aims to “raise the profile of the oft-overlooked treat and – in the process – usurp the dessert trend that everyone loves to hate.”

“Please die, cupcakes. It’s time for tarts to rule,” says Chambers, who left her administrative job and founded Black Pearl Tarts last January following a trip around the world. Although she doesn’t have any formal pastry training, Chambers received hands-on training at Craftsman and Wolves, an acclaimed patisserie in San Francisco. She has become “obsessed” with making a perfect tart shell, which she pairs with both savory and sweet fillings. “I learned to make anything I was craving into a tart,” she says.

    I am all for the tart takeover! Ever since I was a child I've favored pies over cakes and what is a tart but a skinny pie? There are so many wonderful sweet and savory recipes for tarts that it is always hard to choose which one to make.

    As someone who loathes cupcakes and loves tarts I am totally behind this trend – if it is a trend yet. Tarts are my dessert of choice – both to make and eat.
