Michael Ruhlman is back with a cookbook featuring a food that has been popular around the world for centuries. Egg is an homage to an ingredient vital to many dishes that also fares well on its own in many different preparations. EYB is pleased to offer three copies of the book.

    My favourite dinner recipe featuring eggs is a simple Middle Eastern dish. It’s basically poached eggs floating on garlic-infused yogurt and drizzled with smoked-paprika butter. Add a slice of toasted granary bread and it’s healthy comfort food that hits the spot any time of day.

    I had this awesome Flatbread Pizza at Emeri'ls NOLA restaurant that I occasionally recreate at home. Duck confit and fried egg pizza with truffle oil and arugula. Its one of my favorite ways to have eggs for dinner since I am one of those people who hates eating breakfast for dinner.

    A quick meal that was often dished when I was growing up that I still turn to is a plate of rice with 2 eggs sunny side up or over easy served over top, and well seasoned with salt. You chop up the eggs into the rice and let that yolky goodness get all mixed in to the rice. Seems almost too simple but is amazingly delicious!

    We raise our own chickens and there is absolutely no comparison to store bought eggs!! Marigold yellow and so plump! They make such a difference in every recipe, but our family favorite is in fresh pasta ("homemades") – delicious and such a beautiful color. Runner-up would be Quiche Lorraine, which is my husband's fav.
