Eggs on TopThe latest cookbook from Andrea Slonecker tackles a subject both humble and honored. Eggs on Top explores the variety of ways that eggs can elevate a dish. We’re delighted to offer five copies of the book.

Andrea talked with us about her cookbook, egg trends, and plans for two more cookbooks.

    I love Eggs Benedict. I used to go to a little restaurant in Evanston Il that made a variation they called Eggs Sardou, using a fried green tomato instead of the English muffin and it was amazing!

    Soft scrambled eggs and onions! My mom would beat the eggs by hand with a rotary egg beater until they were foamy and then pour them into an electric skillet over chopped onions that had been slowly cooked in butter. She would cover the skillet and occasionally lift the lid to fold the eggs until soft pillows formed. I have never been able to make these eggs like she did, but I keep trying!

    Fried Rice, what I had for dinner tonight. I make it different every time, but I always put in more eggs than normally used because I love the soft scrambled eggs with the savory seasoning and the soy sauce twang. Love it.

    An egg steam-poached on top of sautéed vegetables (whatever is in the crisper but starting with a chopped onion) using the fat from a slice of bacon, bacon reserved and crumbled on top with a grind of fresh pepper. Yum.

    A fresh salad full of our beautiful herbs from our garden, sweet cherry tomatoes, baby peas, lightly seared asparagus, toasted pinenuts, chopped up crispy bacon, cubes of fresh brie, piled high in a bowl…..topped off with a lightly poached egg and drizzled with a good balsamic vinegar!…..yumm!

    My favourite egg dish is my husband's Popover Pancake (aka Dutch Baby) – at least once a week for breakfast! After that, omelettes, quiche, frittata … eggs are very versatile!

    Plain poached eggs from my own chickens, scrambled eggs done Mum's way [chives and parsley etc. gently heated in plenty of butter, then break eggs directly into pan and scramble oh so gently, adding s&p to taste.]. Asian comfort food – a bowl of hot steamed rice topped with quickly stir-fried green onions, then heat pan very high, drop in egg, turn as soon as it is firm on the bottom and remove while the yolk is still runny inside. Top with soy sauce and get out the chopsticks!!!

    I love to make oven baked frittatas with whatever strikes my fancy. Saute up some onions, mushrooms, peppers, spinach and bacon. Mix together some cheese and eggs with turmeric and any other spices. Bake it in a pie pan, and it's wonderful. Sometimes I use leftover lamb, or lima beans, or peas. Sometimes I use crab and Old Bay. The eggs are what bring it all together into one satisfying dish.

    Mrs Jang's home-style fried eggs (courtesy of Kylie Kwong). Free range eggs fried in the wok and topped with white pepper, spring onions, oyster sauce and a chopped chilli. Crunchy, sweet, savoury, spicy. A rival to bacon and eggs.
