Down SouthWe’re delighted to be able to offer three copies of New Orleans chef Donald Link’s latest cookbook, Down South: Bourbon, Pork, Gulf Shrimp & Second Helpings of Everything. Chef Link, a James Beard Award winner, sat down with EYB to discuss his love of Southern food and share his memories of his grandfather’s down-home cooking.

From quintessential Southern classics like hamhocks & crowder peas and sweet potato gratin, to less traditional recipes like the Herbsaint champagne cocktail and blue crab beignets with white rémoulade sauce, Down South is filled with Southern charm.

    My first attempt at a Southern dish was Jambalaya and I still love it with the combination of seafood, sausage, ham and spices.

    Shrimp & grits, probably. Crawfish Etouffee is also a favorite, but that's more Creole than Souhern.

    I also like me some collard greens, believe it or don't.

    My hands down favorite is a South Carolina pulled pork sandwich with that mustard based BBQ sauce that is peculiar to that region. I'm in NY and whenever I get down to the Charleston area, it's the first thing I eat. Mmmm!

    I absolutely love a steaming bowl of Gumbo. Fried chicken and collards would be right up there as well. I'm notnsure how traditional it is but on one visist to Georgia I had a bowl of homemade fresh peach ice cream that melted my heart!

    A BBQ sandwich with cole slaw (in the sandwich). I lived in Georgia for a stint in the 1980s, and a favorite activity was driving through the countryside on a saturday, looking for the smoke that would be the tell-tale sign of a small BBQ joint. So many great meals and memories.

    Since I live in the Deep South I am very biased toward Southern food. There is so much to choose from that I find it difficult to choose a favorite. But for soul soothing nourishment nothing really beats a bowl of collard greens that have been cooking for hours and a hunk of cornbread.

    Living in Australia I sadly haven't had the chance to eat much Southern food. I would have to say pulled pork is my current favourite though! I would love to be able to explore the flavours through use of this cookbook.

    I love a Hoppin' John's Stew. Slowly braised Collards with Black Eye Peas in a velvety rich broth flavored from smoked trotters. Makes my mouth water just thinking about it.

    Closest I've been to the south is Atlanta, I tried an amazing southern fried chicken there. Definitely don't get the "biscuit" thing though…. means a totally different foodstuff where I'm from!

    Fried Chicken, greens and cornbread – lived in Atlanta for many years and I still miss all that great southern food. BBQ, grits, biscuits, peach fried pies, mac and cheese……don't even get me started on New Orleans: gumbo, crawfish etouffe, beignets, po' boys.
