Food52 recently published a useful article on how to change a recipe so that it can be made in a slow cooker. Here are some of the areas the article discusses – you can read the entire list and further description at How to Adapt Recipes to a Slow Cooker:
- Determine size of your slow cooker
- See if it has any hot spots (if so, it’s usually found in the back – you can line it with foil to compensate)
- Prep the ingredients correctly: (for example, use fresh rather than frozen vegetables, pre- or par-boil cook rice, sauté garlic and onions ahead of time)
- Layer the ingredients correctly and add the proper amount of liquid
- Adjust the cooking time: The article has a conversion chart; in general, one hour of cooking at 350 °F equals 6 to 8 hours on a low setting or 4 to 6 hours on high.
And while we’re on using slow cookers, we thought it would be interesting to see how many cookbooks the EYB library has specializing in the topic – there are 239. You can see them, ranked by popularity, here.
