Heritage Cookies of the Mediterranean World – Cookbook Giveaway

Kate and Scott Pavelle are the couple behind the website Heritage Cookies and the author of two cookbooks. Heritage Cookies of the Old and New World and Heritage Cookies of the Mediterranean World. Kate is a fiction writer and publisher and her job is to pitch in with the baking, recipe testing and editing, and the team coordination necessary that comes with making a cookbook reality. Scott is a cookie-baker extraordinaire, and the powerhouse behind decades of cookie research and recipe refinement. His work as an attorney gives him that special focus on the details, and his data-organization skills help us see historical as well as culinary patterns. He does the vast bulk of the writing – as well as the baking.
Heritage Cookies of the Mediterranean World is the follow up to Heritage Cookies of the Old and New World which I purchased a few years ago. I recommended the first book to many cookie lovers as I was impressed with the content. The new cookbook collects masterpieces from the birthplace(s) of the Western civilization with 250 recipes. Recipes include: Spanish Alemandrados (Almond-Lemon Macaroons), Broas de Mel (Portuguese Honeycakes) and Giuggiulena (Sicilian Sesame Fingers).
The book is organized as follows: Methods; Ingredients; Pan-Mediterranean cookies; The Imperial Heritage of Spain and Portugal; French Cookies; Italian Cookies; Cookies from Greece and the Balkans; Cookies of the Middle East; Fillings, Glazes, Icings and Frostings; and Conversions.
Kate provides “extra spice notes” and shares stories as well as “cookie nerd moments” which provides detailed information on a particular cookie – perhaps historical background and the science behind a technique. Scott sprinkles husbandly advice throughout and as stated above does the historical research, most of the writing and baking. This book contains a wealth of information on ingredients such as how to convert high protein flour to low, variations on marzipan and almond paste, and the history behind leavening agents and salt. There is even a section containing recipes to use up extra egg yolks or extra egg whites.
If you want to have the recipe for the most ancient macaroon – and hundreds of other fascinating cookies, this is the book for you.
