Cucina del Veneto and a Quick Bites with Ursula Ferrigno

The Veneto is a northern Italian region, lying between the base of the Alps and the Adriatic to the south. It has rich soil, a good climate, and as a result, produces rice, wonderful vegetables, wild and domestic animals, and much dairy produce. The Veneto also forms part of the ‘polenta, bean and rice belt’ of Italy, and risotti, pulses and a beautiful white polenta are more prevalent than pasta. There are many pasticcerie, and shops selling gelati or ice cream. Don’t forget about the wonderful Venetian Prosecco (the grapes are grown in Treviso), and grappa, which comes from Vicenza.

The author was kind enough to answer some questions for our Members:

Ursula Ferrigno is an acclaimed food writer, chef, and cooking instructor. She trained at the Auguste Escoffier School of the Culinary Arts and has taught at leading cookery schools in both the UK and Italy, including the celebrated Leith’s School of Food and Wine. She has also toured the US, teaching classes in Sur la Table stores, has done virtual classes with Milk Street Cooking School, is consultant chef to Caffè Nero and has made numerous appearances on BBC TV. Ursula has written for BBC Good FoodThe Observer and Taste Italia, and is the author of more than 25 cookbooks including, most recently, Cucina del Veneto: Delicious Recipes from Venice and Northeast Italy and Cucina di Amalfi: Sun-Drenched Recipes from Southern Italy’s Most Magical Coastline (both published by Ryland Peters & Small).

Q: What first triggered your interest in cooking? 

Watching my Nonna cook and the joy she brought with her food always lifted our moods! She taught me everything I know.

Q: If you had to describe your cooking style, what would it be? What types of recipes will we find in your new book?

I would say my cooking style is relaxed, relying heavily on seasonal produce.  The recipes are geared to home cooks and are very do-able.

Q: Are you a cookbook collector? If so, tell us about your collection?

I have a big vintage collection that I inherited from my mother in law. I love seeing the notes she made in the cookbooks.

Q: What is the best part of your job? Do you sometimes feel like working with food all day keeps you from wanting to get creative in the kitchen?

The best party of my job is meeting all of my interesting students and sharing with them my favorite recipes. Working with food is constantly inspiring and always gets my creative juices flowing!

Q: What is your go to for a quick dinner – quick dessert?

Homemade ravioli with spinach and ricotta filling – it can be on the table within 20 minutes! For dessert, definitely a deconstructed tiramisu.

Q: Tell us about this cookbook or any future projects you are working on?

I’ve spent two decades working in the Veneto so this was a very special project for me. All of the recipes are authentic, with lots of interesting essays describing the region and its culture. I have a few special projects that I am working on, all to be revealed soon!
