    From the Pepper Thai cookbook I would make the Pomelo salad. In a cookware facebook group I saw someone post a pic of a salad that had grapefruit, peanuts, cilantro and other yummies and I saved the pic to try to recreate. I’ll bet it’s a version of this salad!
