Harvard’s food lectures are both tasty and good for you
October 7, 2012 by LindsayEvery year, Harvard brings together top chefs, professors, and researchers and explores the world of food. The inspiration came from a course “Science and Cooking: From Haute Cuisine to the Science of Soft Matter.” The lectures have proven to be immensely popular and, as such, Harvard is live-streaming the courses as well as archiving them on You Tube and iTunes. All are free.
The lineup is impressive – included are Ferran Adriá (El Bulli Foundation), David Chang (Momofuku), José Andrés (Minibar and Jaleo in Washington), Wylie Dufresne (WD-50), Joan Roca & Jordi Roca (El Celler de Can Roca in Catalonia), White House pastry chefs Bill Yosses & Joanne Chang, Nathan Myhrvold, and Jack Bishop from Cook’s Illustrated.
