Celebrate National Avocado Day
July 31, 2024 by DarcieToday was National Avocado Day, and a few companies in the US were celebrating by offering things like free avocado toast (Panera) or free guacamole (Chipotle). I didn’t get the news in time to snag any of those deals, but I was able to crack open some store-bought guac (please picture Ina Garten saying store bought is fine) to enjoy with chips before dinner. As someone who came late to the love of avocados, I celebrate the uniquely-hued fruit every chance I get.
Some of my favorite uses for avocados are in the aforementioned guacamole, the ubiquitous avocado toast, as an ingredient in a green smoothie, and as an addition to a BLT. One recipe on my “to try” list is an avocado-based cheesecake. With over 10,000 online recipes that use avocados in the EYB Library, the sky’s the limit for creative and delicious uses.
