“Crookies” are the newest croissant mashup

Dominique Ansel’s Cronut may have been the first viral croissant hybrid, but it certainly wasn’t the last. Since then pastry chefs have created many twists on the standard croissant, and the latest NYC (by way of Paris) craze is a combination of cookies and croissants called the “crookie”. The crookie sprang to life in Paris at Boulangerie Louvard, where baker Stéphane Louvard decided to combine his two “flagship products” into one pastry.

Unlike the Cronut, a crookie is simple to replicate at home. It’s similar to an almond croissant – stuff an already baked croissant with chocolate chip cookie dough, add a little dough to the top, and bake. If you want it ooey and gooey, bake it less, and if you want the cookie to be firmer, bake it a little longer. You could use a different cookie dough if chocolate chip isn’t your thing.

If you want one, making it at home is your best bet – at least for now, crookies sell out fast at every bakery where they are made. It’s a great way to zhush up a mediocre or day-old croissant. Now I wish I had snagged a tray of croissants at Costco on my way home from work – this would have been the perfect snowy Sunday project.

    This just came up in my news feed. Baker & Cook – Dean Brettschneider’s bakery – just shared the Croistillant! The name itself is a delicious mashup: Croissant meets Croustillant (French for ‘thin and crisp’). See this beauty on their Instagram page.
