I love fried chicken. It is not exactly a healthy choice but as Oscar Wilde is credited with saying “everything in moderation”. (Apparently the moderation statement or variation thereof was coined by the ancient Greeks first.) Having fried chicken periodically is an indulgence that I am willing to endure a few charging of the paddles for – I am attempting to be humorous here. I believe that food is nourishment and we should enjoy all types of dishes both healthy and decadent (in moderation). Life is too short (especially if you eat a boat load of fried chicken frequently) but I feel it is acceptable to allow oneself a comforting dish periodically. I particularly enjoy Asian flavors with my fried chicken – Korean fire chicken, Sweet & sour chicken or Japanese karaage are all favorites.
In Susan Jung’s Kung Pao and Beyond, she showcases over 70 crisp, crunchy and spicy recipes, with clear step-by-step instructions for preparation and cooking, that take this humble fast food to a whole new level. Many recipes share a photograph of the finished dish.
