Carolina Doriti was born in Athens. Her grandfathers and mother all worked in food so she comes by her interest in food naturally. Since 2005 she has been cooking professionally full time, working as a chef, recipe developer, restaurant consultant and food journalist.
She is the culinary producer of the USA TV series My Greek Table presented by Diane Kochilas. She has written for publications globally including National Geographic Food UK; she also lectures on ‘Food and Culture’ at the University of Oklahoma; and hosts cooking workshops in Athens and online. She is also the Athens bureau chief for Culinary Backstreets, a company that runs gastronomy tours around the world.
In her debut cookbook, Salt of the Earth: Secrets of a Greek Kitchen the author shines a spotlight on local produce and traditional techniques revealing the defining characteristics of Greek food. The book is filled with gorgeous imagery of both the dishes and of Greece and is organized as follows Olive, Grain, Hive (Honey), Seed and Vine. Recipes include the recipes shared below in our preview as well as Crispy doughnut balls with honey (Loukoumades); Baked feta in filo with a honey-tahini dressing; Meatballs with red wine (Soutzoukakia); and Aromatic Easter bread (Tsoureki) which includes step-by-step photos for braiding.
