Her new title features 125 new recipes for any home baker to bake with confidence every day. Delicious desserts and impressive baked goods don’t have to be reserved for special occasions. Measurements are given in weight and volume.
In a year of fantastic baking books with so many choices facing cookbook lovers, Gemma’s book deserves attention. The “Breakfast in Minutes” chapter alone with Maple pecan scones, Strawberry cream cheese scones, Sour cream coffee cake muffins and a gorgeous Carrot and marmalade bread is worth the price of admission. And then let us talk about the Butterscotch banana cake which is on my list to make (and eat!) very soon – two of my favorite flavors – butterscotch and banana – I am a happy camper.
The book is organized as follows: Breakfast in Minutes; Afternoon Tea; Weeknight Family Favorites; Dinner Party Desserts; Weekend Brunch Treats; Leisurely Weekend Recipes; Short and Sweet Any Day and Master Recipes (e.g., pie crust; basic meringue; etc.). The book ends with a section on baking FAQs.

Q: What first triggered your interest in baking? Do you remember your first baking memory?
I owe my love for baking, and for food in general, to my mum. My mum is an amazing cook, and when I was growing up in Ireland I spent many days in the kitchen with her, watching, helping and learning. Some of my fondest and earliest memories are of making apple crumble with my mum at our kitchen table. She would get me to help by rubbing in the butter to the flour, which was a great job for tiny hands. And whoever helped her make the crumble got a big piece of apple tossed in sugar as a reward.
Q: If you had to describe your baking style, what would it be?
My style really developed in my 20’s when I left professional kitchens and starting my own catering business. It was there I honed my unique style which is what blossomed into my brand today. Bigger Bolder Baking is about taking risks with your recipes, not being afraid to bake outside the box while also keeping recipes accessible and achievable
Q: Are you a cookbook collector? If so, tell us about your collection – number of books, favorite genre, favorite author? What you look for in a cookbook.
Absolutely, because when I was a young baker the only way to get recipes was from cookbooks and magazines. I have a huge collection that I have cultivated since I was young, and have it with me today in my home in Los Angeles. I like to hand pick my cookbooks myself – to thumb through the recipes and photos and see if it feels like my style (or a style that I aspire too). Once it has passed the test, I will bring it home. I don’t need to know the author or chef, I just need to get a good feel from the book.
Q: What is the best part of your job? Do you sometimes feel like working with food all day keeps you from wanting to get creative in the kitchen?
The best part of my job is that I get to bake, but also learn. I have become such a better baker since starting Bigger Bolder Baking nine years ago. I have a way better understanding now of the “why,”which is always the answer I’m looking for. I’m fortunate to get to work with other smart, creative folks who add some of their knowledge and flair and creativity to my recipes and help me to improve on my skills also.
Q: What is your go to for a quick dinner – quick dessert?
My quick dinner, if left to my own devices it is long noodles with truffle butter, Parmesan and lots of salt and pepper. And my dessert would have to one one of my Olive Oil Chocolate Chip Cookies – I always have a stash in my freezer. I pop it into the air fryer for a few minutes, and once my baby is down to bed I climb into bed with my cookie and watch TV. Heaven!
Q: Tell us about this cookbook and any future projects you are working on?
