Celebrating National Pancake Day

February 16 (Shrove Tuesday) is National Pancake Day. The Tuesday before Lent begins is a traditional day for eating pancakes, hearkening back to a time when any remaining rich foods were eaten prior to fasting. Traditions aside, this food ‘holiday’ is a perfect excuse to make breakfast for dinner.
