I am starting a batch of sauerkraut next week. I was waiting for cooler weather to begin as I am new to fermentation. Then in mid-October, the flu bug bit and I am playing catch-up.     My parents buy 20 lbs of cabbage from a farmer to make sauerkraut. I tried once with a supermarket cabbage off season, and it was just too dry. Didn’t work out.     I’d definitely try the pickles. I love full sours (what our family calls old dills), but they are so hard to find compared to half-sours (aka new dills).

    Easy Napa Cabbage Kimchi- I would like to make this recipe vegetarian. Is it acceptable to leave out the fish sauce and Korean dried shrimp and still get delicious Kimchi? Are there any substitutions that you would recommend? Thanks.

    I’ve tried it once before with cherry tomatoes but then they got mold on the top, even in the fridge, and I freaked out. I have heard since that mold is “normal” and not necessarily bad so I’d like to try again.

    I’d like to try the garlic dill pickles! I just planted cucumbers in my garden and I have garlic growing nicely. It would be amazing to make pickles with my own homegrown produce.
