Salt, Fat, Acid, Heat: Mastering the Elements of Good Cooking by Samin Nosrat is a master class in cooking that condenses decades of professional experience into just four simple elements – salt, fat, acid and heat.

    Tahini Dressing. Back in the 80s in the Village in NYC there was a restaurant called "Whole Wheat and Wild Berries" that served what I think of as a "hippie salad" of romaine, shredded carrots and red cabbage, sunflower seeds, and alfalfa sprouts with the most delicious tahini dressing. I've never exactly duplicated it, but I'm alway willing to try one more recipe for it!
