It's hard to decide what to want to make first, but I think the spinach/mozzarella arancini would be on the top of my list. However, there are so many recipes to grab my attention that I would then move to GF focaccia and then to sweet and sour eggplant.

We were just in Sicily for the first time over the winter! It'd been years since we'd been overseas anywhere, really. I loved all of the pistachio use there, so for me it'd be a cross between the pistachio pesto and the sweet and sour eggplant with toasted almonds.
