Cookbook giveaway – Clean Cakes

If you enjoy baking as well as experimenting with new and alternative ingredients, you may be interested in Henrietta Inman’s new cookbook, Clean Cakes: Delicious Patisserie Made with Whole, Natural and Nourishing Ingredients and Free from Gluten, Dairy and Refined Sugar. It provides a wealth of ideas for cooking everything from spectacular cakes, energy-boosting muffins and wholesome loaves to raw desserts and scrumptious tarts and pies, with distinctive flavour combinations and original twists on established classics.

Henrietta embraces nutritious whole food ingredients that are unprocessed, unrefined, natural, seasonal and local wherever possible. The first section shows how to stock your Clean Cakes larder, as well as including foundation recipes such as cashew cream and homemade chocolate and jam. You can try two recipes from the book that are available now on the EYB blog.

    I would say cakes with fruits or vegetables incorporated in them, so carrots, courgettes, beetroots or bananas for example.

    I try to use only organics and get as close to vegan as I can. I make a mean black bean brownie with no sugar, no flour and fresh Michigan walnuts.

    I've recently been on a gluten free/few grains diet and I have enjoyed using alternative flours like coconut flour, almond meal and polenta in baking.

    I love using lemons and oranges, they add such a wonderful flavour to cakes. My favourite cake is orange and almond cake, .. it uses pulped, whole oranges and almond flour instead of wheat flour.
