Take your ice cream sandwich game to the next level

Many people have fond memories of ice cream trucks and stands from their childhood. Whether it was cones, sundaes with sprinkles, or ice cream sandwiches, the icy treats were a treasured part of summer. Pastry chefs are now rekindling those memories by making ice cream sandwiches that feature flavors more suited to adult tastes, says indexed magazine  Bon Appétit.

Cronut creator Dominique Ansel has his own twist on the treat. At Dominique Ansel Kitchen in New York City, the chef places salted caramel ice cream between brown sugar kouign amann. Invoking images of state fairs, Quenelle in Burbank, California offers funnel cake ice cream sandwiches, with nostalgic flavors like Fruit Loops and Corn Pops cereal.

Curiosity Doughnuts in Stockton, New Jersey is run by the duo behind the Ideas in Food blog. There you will find a doughnut sandwich with frozen custard, and yes, you get to choose which type of doughnut you want to use. Charleston, South Carolina’s Parlor Deluxe sandwiches sophisticated ice cream flavors like honey-lemon olive oil and salted pistachio between fluffy Belgian waffles. But the decadence doesn’t stop there, as you can get the waffles dipped in melted chocolate and rolled in crushed pretzels.

    I love making ice cream sandwiches for summer parties – my favorite combinations have been ginger cookies with lemon ice cream; triple-chocolate cookies with strawberry ice cream; and oatmeal cookies with nectarine ice cream. I have just used the Bookmarklet to import to EYB all the recipe details from the Epicurious site. I also often make macaron ice cream sandwiches. These are harder to make since the macaron shells are delicate but they look and taste so good. I have fruit powders I get in New Zealand to flavor the macarons. Some of the best have been orange macarons with buttermilk ice cream (like a Creamsicle); mango macarons with toasted coconut ice cream; and blackcurrant macarons with white chocolate ice cream.

    I love the idea of macaron ice cream sandwiches. Another thing to add to my "must try" list. Are those powders available in the US?
