Cookbook giveaway – Nourish

Nourish cookbookThe authors of the new cookbook Nourish: Whole Food Recipes featuring Seeds, Nuts & Beans created the book after discovering a mutual love for beans. The duo, Nettie Cronish and Cara Rosenbloom, felt that  nutritious and inexpensive legumes, along with seeds and nuts, are often underutilized in everyday cooking. Since those ingredients offer a positive nutritional impact that belies their size and can be easily incorporated into familiar foods like granola and chili, your morning oatmeal, and the crust on tuna or lamb chops, Nettie and Cara decided to write a cookbook dedicated to legumes, nuts and seeds.     Really — a toss-up: chick peas or cannelini beans. Where live, it's hard to get some of the other interesting beans I keep reading about.

    We really don't get a great variety here so mostly it is chickpeas, but I'd love to branch out more and maybe order some online.

    I enjoy cooking with black beans most, then garbanzo beans. I love the versatility of both, whether simply adding them to a recipe, or creating something new, such as a black bean cracker paired with a white bean or classic chickpea hummus. However, if I am going to sit down to eat a bowl of legumes by themselves it would be a bowl of lima beans, hands down.

    I love black beans , maybe way too much! But lately I have been looking to green peas. I think just a bowl of peas with a pinch of mint and maybe a little spice and I am happy.

    Chickpeas! (I recall a particularly energetic and always upbeat classmate of mine from college, ca. 1990s: When I asked her for her secret one day, she gaily replied, "Chickpeas!" before bouncing off, likely to the nearest salad bar.)

    I have several types of beans stocked in my pantry, but I always seem to run out of chickpeas first. They can be a main, a side, an addition to a salad, etc., and now I even save the canning liquid, "aquafaba" for vegan meringue.

    That would have to be the Phaseolus vulgaris! Diana Kennedy has a FABULOUS recipe in one of her Mexican cookbooks for Black Beans with Pork and Rice. This is where I learned to fry the raw rice in garlic oil till golden, and then to cook it in black-bean broth. The beans and pork are served over rice with several condiments on top like chopped radish, avacado, chopped onion, feta cheese and lots of lime juice squeezes. It is absolutely delicious and beautiful!!

    Black beans and chickpeas are most used/cooked. I do love lentils, especially lentil salads (but I hate picking them over)!
